Simple focaccia... So last week we promised you the recipe for our focaccia we made during the holidays, and here it is! Slightly delayed, but we have been working on some other areas recently which are progressing really well, so not been able to blog for a few days. We will be letting you know soon what we have been up to though! Back to focaccia. We love making this bread. Its one of our favourites! We have never met anyone that didn't love, so if you have never made it before, maybe its worth having a go? Of course there are many different recipes that can be used, but this one is the one we use the most.
This recipe uses a preferment of flour, water and yeast which is made in advance. The reason for this, is that it adds additional flavour from the fermentation, but also develops the gluten during fermentation, which helps the final dough by adding some strength to it. You should end up with a soft crust and nice open texture. We add olives to ours, but it also tastes great plain. Don't forget to top with rosemary and sea salt flakes to finish it off! To view the recipe click here. As always, with all of our recipes, you can download the recipe as a PDF so you don't have to worry about getting your tablet or phone covered in dough!

Cookies are a great source of happiness for me. The sweet taste of those chocolate sprinkles and those creams that are really sweet are really satisfying. I want to make my own bread. A bread that will give me a name in this industry. I will ask my friends about this and see how far I could go. I want to thank my friends about the tips that they have shared with me.
